Online college courses

I am a regional solo driver that is out for five days at a time. Most days I have an hour or so drive time left when I get to my destination or I stop for the 10 hours in a place that sets me up great for the next day's run.

I have been thinking about starting to take college courses again, (I'm not looking for a career change already) and I am wondering if anyone out there has done this while driving. My cellular plan can handle the extra online time without breaking the bank and I think it would be a good way to pass the time.
