Truck Stop Advice: Fiance' driving from San Antonio to Tacoma, WA

My fiance is making the move up to Tacoma WA. He's not a trucker but is towing a boat and driving his Toyota with his belongings packed in both. The idea is to secure with tarp and tie-downs. He thinks staying at safe truck stops is his best option to keep an eye on his load. I volunteered to help find some places. Where are good places to stop along this route? Thinking Lubbock, TX, then through Sante Fe, up through Salt Lake, Boise, and then through Spokane to Tacoma.
