I just got an instant pot because of all the good things I've been reading about it. Sounds amazing! I'm just wondering if it is safe to cook in it while driving, what with it being pressurized. I'm just concerned that all the jostling around could create some kind of emergency type situation. Haha. I would rather not deal with an explosion in the truck. Also, is it leakproof for cooking things like soups? Any info/advice would be appreciated. Thanks!

Welcome to the forum! I probably wouldn't while I was driving (just because I have never been in a truck in my life and kind of assume that either A. The APU wouldn't work while you were driving if it runs on an 110/115v outlet, B. It would spill on bumps, or C. It would explode), but I know many drivers in this forum use those, and will probably give you some good insight.

HOS:

Hours Of Service

HOS refers to the logbook hours of service regulations.

APU:

Auxiliary Power Unit

On tractor trailers, and APU is a small diesel engine that powers a heat and air conditioning unit while charging the truck's main batteries at the same time. This allows the driver to remain comfortable in the cab and have access to electric power without running the main truck engine.

Having an APU helps save money in fuel costs and saves wear and tear on the main engine, though they tend to be expensive to install and maintain. Therefore only a very small percentage of the trucks on the road today come equipped with an APU.

I don't know about the installer, but I cook in my crockpot while driving. Put a paper towel under it. Bungee the lid down and make sure it is tucked back far enough in a cubby not to bounce out.
