How bout just picking up some celery, carrots and other vegetables and eating them while you drive. That way your body can do the work of the digestion which will get the ingredients into you without having another fancy gimmick taking up room in your cab.
Then when you stop for a break, you can get out and walk around, maybe do some exercises instead of sitting in your cab making a 'drink' from something you could have eaten.
Are there any truckstops out there with fitness centers? Even if there aren't, you should be able to find some kind of fitness center be it the YMCA or a 24 hour membership type of place. You've got 34 hours to use in a reset and if you're not at home, use the time to get a couple of workouts in, maybe swimming, ride a bike if you carry one on your truck..
Main thing is, turn off the TV, get out of the cab, and get moving.
Eating raw veggies is a good idea. But for someone like me, juicing is better. There's just just so many veggies l can chew raw. To each his/her own.

I've got a minimalist/self sufficiency streak in me, so I have been playing around with immersion blenders at home. They can do smoothies, soups, mayonaise, Whipped Cream, Hummus, Peanut Butter, Mashed Taters, Pesto, and Sauces. They start at $13 but if you wanted to do things like peanut butter you would want an all metal one. The cuisenart(?) is around $35.
