Update: I have been invited to attend orientation with Western Express. I am grateful for this opportunity. I am trying to figure out what to do with the food in my home. I will pack what I can to take on the road with me. I hate wasting food, but some of it will have to be thrown out since I will be gone. Do you have any advice on what to bring with me? Thanks.
Whatever you can't bring with you, maybe donate whatever's still in its original packaging to a local food bank/pantry/homeless shelter? I'd suggest shelf-stable foods like soups or Ramen noodles and such, along with a reusable bowl and utensils you can wash; if you're parked at a truck stop on your 10hr break, a lot of them have a microwave you could use. I've been using Uncrustables, the pre-made pb&js, as my breakfasts lately. I don't know if they need to be refrigerated or not, I keep mine there but don't know if it's necessary. Maybe you'll get lucky and your trainer will share a bit of fridge space. If that's the case, I'd suggest some deli meats and get a loaf of bread.

Dutch Maid Logistics
Big M Transportation
These are companies that at various times hire drivers without experience (unsure of current policies) and have reputations for providing "2nd chances." They all hire out of St Louis.
Dutch Maid Logistics isn't going to show up on most job search sources. You have to go directly to their website.
There is also Decker Truck Lines. Little bit more of a long shot, but you are right in the middle of their prime operating area.
EPU:
Electric Auxiliary Power Units
Electric APUs have started gaining acceptance. These electric APUs use battery packs instead of the diesel engine on traditional APUs as a source of power. The APU's battery pack is charged when the truck is in motion. When the truck is idle, the stored energy in the battery pack is then used to power an air conditioner, heater, and other devices
