Your in luck. There's still plenty of great mom and pop truck stops left with diners that serve great food at value prices. You'll have to look back a bit in the threads but there's one that talks about everyone's favorite truck stops.
I look forward to finding them and writing them down. !!

Petro has iron skillet. There can be some spots where the food is less than great quality, but for the most part, it's generally pretty good.
As mentioned, the mom n pop stops often have small home cooking places that are usually pretty good.
Big cabin travel center on i44 big cabin, ok. Has some pretty good food as well as Russell's travel center i40 Glen Rio, NM.
Yes, I was looking for those cross country, I ate at a couple of them. Pretty good. Country Kitchen is decent too.

Brian, if you stop at those "national brands" - Flying J/Pilot, TA/Petro and Loves, you'll get the same-ol same-ol every time. The Burger, Catfish, Coney Dog and Pie you are reminiscing about are still "alive and well" at the local style truck stops that Robert (Dragon) talks about. Simply get an app like Trucker Path, ignore the Big 5, and go on a Truck Stop Diner adventure again. Also, you will probably pay less than $1.60 for a simple coffee refill.
Whately truck stop 91 Mass. I have a photo of my open faced turkey. Its over an inch thick. Cant do photos though.
Longhorn Truck Plaza on I-10 in Vinson LA has a really good chicken fried steak...Tuesday's $7
I stopped at the Frog City Travel Plaza for my 10 tonight. I-10, exit 87, in Rayne, LA. Very good food, at a reasonable price.
I didn't fuel here though. Doesn't look like they have DEF at the pumps. It's an AMBEST location.

When I was growing up (I'm 55) my parents frequently took us to truck stops to eat, said the quality and portions were the best deal. I did the same with my kids. Over the last 10-15 years I have made numerous trips in various 4 wheelers from CA to NY and back, NY to FL and back and always ate at truck stops. I've made the round trip twice this year in a jeep cherokee (ouch) and it seems like 90% of truck stops are fast food now. And while Denny's is better than starving it's pretty much fast food served slow.
Sad state of affairs considering I'm working at starting my new driving career in the next couple weeks.
TWIC:
Transportation Worker Identification Credential
Truck drivers who regularly pick up from or deliver to the shipping ports will often be required to carry a TWIC card.
Your TWIC is a tamper-resistant biometric card which acts as both your identification in secure areas, as well as an indicator of you having passed the necessary security clearance. TWIC cards are valid for five years. The issuance of TWIC cards is overseen by the Transportation Security Administration and the Department of Homeland Security.
