I have been listening to this literature and History Podcast and the very first episode talks about the origin of written language. A clay tablet was discovered in Iraq that dates back to 3400 BC. And that day tablet is considered the oldest form of written communication. The tablet says 2. sheep God Innan. The scholarly interpretation of that clay tablet is that it means two sheep were delivered to the temple on behalf of the God Innan. So the oldest document of written language is a bill of lading.
