I cook in my truck quite often but I'm not big on taking pictures of meals. I suppose I'll have to do a few pictures. I have made eggs Benedict, grilled shrimp, steaks, pizza, chicken Alfredo and all kinds of things. I'll try to do better on taking photos. I've posted some on the FB page called Big Truck Cooking. I'll see if I can't save them to my phone and add them here.
Tonight, however, I splurged and had some wonderful prime rib, a baked potato and a salad at a little truck stop in Osseo, WI.
Spicy Peanut Chicken. It was a recipe I got from a one season show called the Ambush Cook. Delicious stuff.
The next one was some Cajun Pasta with Andouie Sausage and Shrimp..
Or how about Mini Deep Dish Pizza? Yes, I make it from scratch on my truck.

Okay, so maybe I didn't "prepare" this meal. But I did walk across the street to the local market and have them steam these puppies up for me.

1 cup white rice
1 green pepper
1/2 onion
Brussel sprouts (about a cup or so)
Salt and pepper (couple shakes)
Equipment: All in one crockpot/pressure cooker
Prep and cook time: 1-1.5 hours
