There's only three trucking movies for me:

Convoy

White Line Fever

Smokey and The Bandit

I don't really have a trucking movie in mind other than Over The Top of course (my friends never seem to get tired of bringing up references to that movie when I'm around).

But the movie that first made me think about how cool it would be driving across the country is Cannonball Run.
